Filipino food is more visible than ever. So why do so many of us still talk about it as though it's waiting to be discovered?
I wonder—when should we (in general) shift the mindset? I suppose asking for visibility for so long has meant it seems to be the only thing we know how to do. We get stuck with 'uy Pilipins!'
I think we need to take ownership of that shift.
For years we were focused on being seen. The next challenge is recognising that visibility was never the destination.
At some point we have to stop behaving like we're still waiting to be discovered and start acting like authors of the next chapter.
I'm excited to see where that takes us.
